  1. I am wanting to create a custom category layout for a specific category.

    I should be fine with creating the modified function, I am just not sure how to call this for a specific category, leaving the other categories that I have as the standard default.

    I am wanting on the custom category to have the author ect removed, just the post title and excerpt.

    Do templates for categories work the same as page and posts, using the slug ie. page-slug(test0.php post-slug(test).php. If the category was projects the catergory slug if it works for categories would be category-projects.php, Wordpress would use this file automatically if I called the category for projects to be displayed.

    Thanks very much for any help or advice :)

    if you just wanted to handle it in your css, you'd do something like this:

    .category-yourCategorySlugHere .entry-meta {
       display:none;
    }

    if you want to change some of the standard thematic elements that will be the way to go. if you want to drastically alter the markup then you could indeed create a new category template (category-bacon.php for example). See more on the Wordpress Template Hierarchy:
